The compound indole-3-carbinol, which is derived from the breaking down of glucobrassicin, a naturally occurring compound found in cabbage and other cruciferous vegetables, plays an important role in detoxifying the liver. Glucobrassicin is water soluble, meaning that this beneficial compound may be partially dissolved when cabbage is cooked in water. Steamed, roasted or baked cabbage is best for preserving indole-3-carbinol in cabbage and other cruciferous vegetables.
